    What did you caramelize the ribs with or perhaps braised.
    Tell me more about gastric diot sauce.i have been in the culinary world for 24 years and that’s new.

    Your Pam frites looks fresh.
    Could use more of the idiot sauce on my ribs.

  3. Ribs look a bit soggy…need to crisp that up on the grill or a broiler. It would look better crisped up and center plated. Fries are hard to “plate” nice, but it looks out of place with the rest of the dish. I read your description of the sauce in a different comment and it sounds delicious

    Aside from the ribs, which has been addressed, I would like to see the fries in a dish that’s a tiny bit taller and more slender to add some height.

    Possibly, some sort of small side of greens to fill the empty space and add a little more color.

  5. This needs work. I’d seriously consider starting from the ground up. You’re fries look great though.
