  1. how big are the soufflés roughly? love the look and flavors of the dish, my only thought would be wondering if i have enough creme fraiche to satisfy the moisture aspect. if they’re 1-2 bites then perfect

  6. What’s your success rate on frying these? Whenever I make them less than half actually puff up/crisp right.
