    PORK TENDERLOIN:

    Two pork tenderloins

    Salt and pepper to taste

    Place in vacuum sealed bag with…

    – 2 sprigs fresh rosemary
    – few sprigs fresh thyme
    – 2 cloves crushed garlic

    Sous vide for 4 hours @ 130.5°

    Remove from bag and pat with paper towel under VERY dry

    Add avocado oil to hot cast iron skillet

    Sear all sides of tenderloin approximately 1 minute each side while basting with garlic herb butter

    CILANTRO LIME CREMA:

    3/4 cup sour cream

    Juice of 1 lime

    1 clove garlic finely minced

    1 Tbsp of finely chopped fresh cilantro

    1/4 tsp cumin

    1 tsp Spanish style paprika

    Pinch of salt to taste

    Pinch of ground black pepper

    Place one burrito sized tortilla on cutting board.
    Spoon crema on middle of tortilla and work outwardly in circular motion.
    Sprinkle small handful of queso Oaxaca one one half of tortilla.
    Sprinkle chopped pork on same half of tortilla.
    Sprinkle another small handful of queso on top of pork.
    Fold tortilla in half and place in warm skillet with a bit of oil to brown.
    Flip tortilla brown other side.
    Place finished quesadilla on cutting board and cut into triangle-shaped fourths.

    Enjoy with crema or your favorite salsa/hot sauce.
