crabclawmcgraw on May 2, 2023 5:08 am looks good, needs a harder sear on the scallops. the grapefruit seems sort of out of place. the fennel would probably look better with more even cuts delicately placed. orange would probably be a better choice in my opinion since you used some in the purée. just reinforce those flavors.
RapportRaptor on May 2, 2023 3:54 pm I feel like I’d be left with a lot of sauce after eating the dish. I’d suggest using a squeeze bottle to put specific dots of purée around the dish. It may also make it appear a touch less crowded (could also just use a larger plate). Flavours sound bomb though!
