I‘d add some kind of sauce, otherwise i could Imagine its going to feel like eating a fork full of sand.

Skip the parm, it doesn’t enhance the dish aesthetically or taste wise. You have a lot of umami from the fish already.

Also, cleaner cuts on the eggs would look better. But it’s nice to see someone get creative with traditional Scandinavian food!

Certainly something I would like to order to try.

Feels shaggy, like it could be tidied up from all the shavings. Instead maybe incorporating thin curls of Parmesan cut with a vegetable peeler.

Cold poached fennel could be nice in this to add another shape, texture, color, and flavor.

Half an egg seems about right, but the wedges look small and beaten up. Are they just what you have or can you get larger? Have you ever tried pickled eggs? Years ago I could buy them made with beets, so they had a pink color & firmness that would make them cut well.

  4. The pickled herring, which is supposed to be the main element in this is just completely hidden? I also agree with previous comments about the lack of sauce.
