Great contrasting colors and I like how you melded the flavors. Lighter plate, build with height, less is more sometimes, and build the foam. Just my two cents which are typically worth a penny

That dish would looks a lot better if the sauce is under the stuff instead of being a puddle on top.

I would call that more sauce than foam.
Spent a good 2 minutes trying to figure out what the sauce was, until I read pecorino foam a second time.
would eat 👍
Sauce would def be better on the bottom, as someone else mentioned, or re charge your nitrous canister and foam it up
