A dish I made for an online food challenge on Instagram. Seen above: carrot, cucumber, poblano, jalapeño and habanero juices. Carrot and cucumber shavings, mint, pistachio, and flowers from my garden.
Not too spicy, served very chilled. Great summer appetizer if this is the kind of food you are into.

That is freaking awesome. What exactly the the broth/base??
It’s so beautiful! I would definitely order this and take a picture.
Great presentation, love the contrast in color👏. Not a fan of calling this aguachiles, or the mint and pistachio but you’re presentation great.
How did it taste though? It’s pretty but I don’t know if I would order what comes to a salad/soup. Aguachile has far more solid matter than this so I’m curious what your opinion is on how it is.
This looks amazing.
Only complaint I would have is I don’t like eating whole mint leaves like that. It’s a little much. Torn into thirds or picking smaller leaves seems like it would give a better eating experience
It looks pretty. But really just looks like a plate of vegetable peels.
Looks like a soup…..I’m a sucker for plated soup but aguachil, I’m looking for some fish or meat alt.
What an absolutely gorgeous dish. A work of edible art.
Where are the shrimp? That’s definitely not aguachile
