That’s awesome! I’ve never heard of provoleta before. I found [this blog post](https://blog.amigofoods.com/index.php/argentine-foods/provoleta/) that’s basically a love letter to the stuff, from the looks of it. I wonder if any of the Argentine steak places in my city have this on the menu.
