Beautiful. What’s the difference in texture of gram flour Vs regular?

I like this. It’s great color usage and good geometry.
I almost wish you had done a bit more splatter with a slightly larger plate. Like, it’s great, I just want a tiny less control on it, if that makes sense.

Hello, I’d like to ask are those floral looking things edible or just for display?

I tend to stay away from using blueberries in my desserts, although they are my favorite berry. My go to is always an Appalachian style blueberry pie with chantilly, or a spin off doing a blueberry custard tartlet.
I think your plating and components are beautiful and well thought out, but the color palette is very unappealing to me. Everything is too pale/ murky looking. My only criticism is to pour your cream more gently so you avoid some of that splashing effect, and I would take the petals of the flowers and sprinkle them over the dish.
Also, never heard of creme de mure syrup, what is it?

Lovely, I feel like it is missing a baked element. Everything seems kind of chalky/crunchy or sauce. Perhaps a rectangle of cake beneath less meringue and less tuile

I think the colors are great! I would like the composition a little better if the syrup was the sauce that was swirled around the plate, and the blueberry cream was the dots. I think their respective consistencies would work better.
The blueberry cream looks unappealingly…chunky? Not the right word but hopefully you understand what I mean. Straining it may be a good idea if that’s a possibility.
I like the rustic aesthetic of the broken tuille. The choice of not smoothing out the parfait, as well, leans the plate towards messy. Just slightly though!
Really great overall design, just could have a slightly cleaner look if a few things were tightened up.

My mouth is watering!! Well done-dayum!

The central element is grey and needs some color to match the rest of the dish. Sauce splatter are messy. Nice ideas and composition other than that.

Love the purple, lavender, and golden tones…
