
Just 350 calories for this Asian inspired crab salad stack🦀 With the spicy mayo crab salad, marinated cucumbers, and creamy avocado, you’re getting a salad reminiscent of sushi without all the rice calories.
Marinate 1/4 cup of thinly sliced English cucumbers in 2 tablespoons of soy sauce, 2 tsp of sugar and 1 tablespoon of rice vinegar. (NOTE: when plating, you will only be using the marinated cucumbers, so no need to count all the calories used in the marinade—I count half)
Toss 3oz of crab meat (real—not imitation) in 1T of Sriracha with 1 1/2 T of light mayonnaise.
Layer your marinated cucumbers for the base and top with chopped tomatoes, red orange and yellow bell peppers, then the crab salad. I like to add a couple jalapeño slices, chives, and shallots on top with half a jammy boiled egg (boiled for 6 1/2 minutes). Pop on an ounce of creamy avocado slices and enjoy!
