I was confused for a second as to why your panna cotta had melted all over the plate … only to realize that it’s a zoomed in angle of the top of the ramekin. Ha ha. Mushroom panna cotta sounds interesting … I would totally give it a go!

I had to use mushrooms for an entire menu for a specialized event. Ended up using Candycap mushrooms to flavour the cream. It it turned out beautifully as a sweet mushroom panna cotta, kind of like an earthy-sweet browned butter.. Made a porcini brittle to garnish, with some brown butter walnut soil. Very interesting, but I wouldn’t do it again unless I had to.
