  1. Just my opinion but I would keep everything central, veggie on top, mushroom in the middle and jus as plate garnish🙃

  2. Purée is a bit sloppy and looks like it could be passed through a chinois. Lot of veg on the plate for that portion of meat. Everything could be tightened up together

    The colour on the veg looks awesome though. I’d still smash it 100%

    You’ve got some big ol pile of veg and purée, a whole shiitake cap, and this little beef nugget.

    Visually, it looks like you’re ripping me off.

    Edit: I realize you don’t have paying guests in your house, but fuck me, where’s the beef? Are you mad at yourself?

  4. I LOVE THE CONCEPT. flavour would be excellent. Just work on tightening up your plating and you’re be there. I would just not make it look so perfectly placed I like a little randomness

    Maybe next time slice the shiitake to create a bed for the ribeye with a smear of your beef jus opposite of a lighter carrot purée smear.

  6. Considering this is beef and broccoli, and I can only speak from my own experience of what i THINK you’re going for; that being urban, chinese food, good feeling shit. I think this is off.

    Veg looks only steamed, and beef while extremely well cooked looks separate and if I’m somewhere where, ‘beef ‘n broccoli’ is on the menu, i’d like it incorporated. I think this is a dish that requires experience to actually elevate, and lots of people on this sub will have more insightful crit. A miss for me.

    Edit: Love the effort though personally.

  7. like others have said, concept seems dope. just keep working on the plating. the jus seems “stale” like if a few minutes passed by before this picture was taken. the purée should’ve stayed in the vitamix an additional minute or two or ran through a china cap. bigger piece of meat. the idea is solid af though

  8. I think you lost yourself in precision. Lose the pumpkin puree, chop the mushroom and mix with the broclini. Sauce on plate, then veg then nestle the beef inside. Everything looks super well cooked and delicious! Sometimes we just try a bit too hard and that’s where our failure lies.
