    Certainly improved plating, I’d argue that it looks slightly minimalist/ „too tidy“ now. Have you considered adding either a caramel crumble or some caramel shards/nest on top?

  2. I wouldn’t put the sauce thingy on the ice cream. Make some dots or something here and there on the plate instead.

    Just an idea on photo number 2, you can make a depression on top of your ice cream with the back of your scoop, then pour the sauce in. That way it doesn’t look like it’s been jizzed on

    But I like both plates 👍 good job man

    P.S.: I think a lighter coloured plate would work better. Your chocolate on a Matt grey/black plate doesn’t do justice to your hard work

    It looks neater but you have too much negative space on the plate, I’d say use a smaller plate or add something if possible

  5. I think if you went with a flat white plate, stacked your components on the left like you did in the first picture and put your dirt and ice cream over a smear you’d get a lot more pop visually. Aside from that perhaps an incredibly fine chop on some mint lightly placed over your ice cream may introduce another contrasting color that would be pleasing to the eye. OR you could lightly sprinkle the ice cream with a pink sea salt to play off of the sweetness and add another color component

    I think the new version is much better. I would do a half moon of dots of reduction/cream/whatever, in decreasing size around the 2 food items.

    A little dash of red or green would be nice here. A few fresh raspberries or a a little fresh mint (a small branch would look better than a leaf maybe) or something to add to the new one might do the trick. Nothing that takes away from the main flavor profile, but something bright would really pop when paired with the brown-white color scheme. Adding more brown or white will not help and will make the desert look overcrowded.

    I love the new plate up! It’s beautiful and lots so delicious! 😋 I would add a curved swipe of caramel and/or a few dots of caramel to the empty side of the plate closest to the ice cream (3 or 4 dots in the inner curve). And maybe a smaller matching curve and dots to the corner of the upper side of the crunch “bar”.

    By the way, those aren’t blackberries but blueberries. Still, great plate up and dessert! ❤️

    are you attached to the brownies? I’m not sure what pumpkin crunch is, but it looks creamy and from the name, I’m assuming it also has crunchy elements. could you switch the brownies for a chocolate croistillant base and make a more entremet-style dessert? you could place a tempered chocolate sheet on top of the Chantilly and then balance blackberries on top, or a florentine-style tuile, or you could layer a thin sheet of nougatine to emphasize caramel. I think even broken honeycomb carefully placed on the Chantilly with blackberries would be very pretty.

    I agree that the caramel sauce shouldn’t be drizzled.. tbh I’m not even sure that you need it, although you certainly could experiment with drizzles and brustrokes. The chocolate soil should be finer and more intentionally placed, otherwise removed. the quenelle could be cleaner. one element you may consider playing with is freeze dried blackberry powder! finally I think a white or even blue plate would make everything pop.
