Looks good! The only thing that I don’t find so appealing are the mushrooms that you sliced thinly on top. They seem a bit dry to me. And I think the dish comes out better on a lighter and more spacious plate. On the other hand, the ‘unknown’ is also very nice when you are eating. Well done!

This is beautiful 💜 I’m definitely thrown off a little by the raw shaved mushrooms since everything else looks so composed & purposeful. Overall beautiful dish though!

I would recommend to shave the mushrooms from top to bottom and use a stencil to make nice perfect “coins” out of them (ofc you can throw the trimmings in any sauce of your choice), otherwise thats a great dish

Raw mushroom garnish is a big no I would send this back at a restaurant. Its just not done, even a slight sautee would elevate this whole dish. I got chewed out in culinary school for using a similar garnish on a mushroom risotto. But other than that looks and sounds good.

I’ve been seeing thinly sliced raw mushrooms like this used more and more lately. I’m not sure how I feel about them personally. It feels wrong but I grew up with raw button mushrooms in my salads all the time and I like the flavor and can see how it can be used to fill a purpose but I just can’t get over that “wrongness” feeling that apparently others here feel very strongly!!!

The dish sounds OK, perhaps a little one note. The raw mushrooms on top are a huge no. Also, having the two applications of the mushrooms in this instance feels unnecessary and not very cohesive. Not really understanding the direction of the dish. It looks pretty, though!
