    Clearly there are other components to this. Mind describing the dish a bit more? Snail sausage is escaping me right now—— maybe it’s time for bed. I can’t imagine the texture- but I’m intrigued

    The actual sausage itself sounds amazing. The onions being raw I’m not so sure about, and the plating of them just looks off, like support beams for the truffle or something haha. If you gotta use raw onion I would dice them a little finer

    I think a puree of some sort would help this dish a LOT. Parsnip maybe?
