Iām not strictly vegan but severely allergic to shellfish so I havenāt been able to eat it in a decade. It used to be one of my favorite things until it nearly killed me. Screw you kimchi youāre not going to win this time.

I love kimchi so much even if the vegan brand i get is expensive. I’ve been mixing into freshly made rice and it’s so good. I had some an hour ago and seeing this pic still makes my mouth water lol š

Itās actually a super easy and fun ferment to make for yourself. Thereās heaps of online tutorials: sub soy sauce or tamari for any shrimp paste or fish sauce. You can really tailor it to what you like. You can even sub grated raw potato in lieu of the rice flour. I find it really forgiving and throw whatever I want in there. I also use a splash of the last fluid to seed the ferment on the next batch. Itās my go to topping on pretty much every bland thing. I reduce the ginger so itās more versatile for my tastes.
Edit: top tipā¦your place will smell of cruciferous farts; keep it in a cupboard to contain the smell until the ferment level is where you like it then pack your jars in the fridge.
