    Looks amazing, I guess I’ll be the one to ask about the potato(es?). I usually think of small scallop-like rounds when I think fondant potatoes. This looks like a potato salmon filet.

  2. I would turn this into a vegan dish. I am not a vegan tho. Another option is use a filet for a circle cut, to add to the onion rings.

  3. i like the verticality, ingredients, and restraint of the plate, but i don’t see how the customer is supposed to cut the steak without making a total mess of the plate. the steak should be directly on the plate if it’s served in one big piece, you could also consider slicing into large pieces and interspersing with the potatoes. salt flakes sprinkled on the cut bits of the steak is always a nice bonus too.

    The sauce looks less like bearnaise and more like hollandaise w chives sprinkled on top.
