


Tried Epoisses for the first time today. I liked it a lot, very rich, a bit sour/zesty, had some funkiness simmilar to blue cheeses, and also a somewhat strong bitterness. Not persistent, but noticeable and a bit overpowering.
Is that normal, or was it deffective? Overripe? Improperly stored? Best by March 24th.
Also had Saint Albray, another bright orange rind cheese, and that had a very unpleasant lingering bitterness, that I couldn’t even finish it.
None of the multiple Fromager D’affinois cheeses ever had any noticeable bitterness (regular, truffle, campaigner).
