  3. I’ve been seing olive oil cakes on many menus recently (not that it’s new, just that i got interested in fine dining lol), why is that so ? It seems like a weird combination for someone who has never tasted it

  4. Soigné! Probably the only thing I would change is adding some dehydrated raspberry dust over the mascarpone to give it some visual texture. Amazing work.
