  1. Looks really nice. Small gripes for me would be to start with smaller drops of sauce so your final drop is a little smaller, like the size of the second-to-last drop. The overall effect is nice but that last red spot is a monster. Also, you’ve spent all that time on the satsuma, give it a little more visibility, in the pic it gets overshadowed by the tuna.

  2. Excellent job! What you did on the left side of the plate is something you can carry over to a huge number of dishes. Very impressive.

    Maybe try infusing the oil with something to fix the color scheme, this is such a dope plate though chef, idk where you’re at, but that would fly in the best of Boston
