Looks really nice. Small gripes for me would be to start with smaller drops of sauce so your final drop is a little smaller, like the size of the second-to-last drop. The overall effect is nice but that last red spot is a monster. Also, you’ve spent all that time on the satsuma, give it a little more visibility, in the pic it gets overshadowed by the tuna.

Maybe try infusing the oil with something to fix the color scheme, this is such a dope plate though chef, idk where you’re at, but that would fly in the best of Boston
