  1. This dish is completely vegan. Charcoal feta is homemade vegan feta made from charcoal infused coconutoil, tofu, salt, acid, garlic and onionpowder. As it hardens it’s easy to crumble like real feta. If done well and made with a good quality (not soy tasting) tofu it really has the same mouthfeel as real feta!

  2. It’s a beautifully plated dish.

    I think it would pop more on a plate that wasn’t so dark.

  5. What are those fermented cilantro stems like? How did you ferment them? I can’t even begin to imagine how that might taste!

  6. How do you make the crumbly walnut gunpowder seasoning? How do you get it to a crunchy substance? Looks absolutely stunning. Was the pumpkin thin enough for easy eating?
