    get some XG in that beetroot puree. and plate on a level surface. nice dish otherwise.

  2. I’ve done something similar with prosciutto and mushroom powder.
    Looks great and would imagine the flavor is awesome.

    Maybe a smaller plate?something to perfectly fit the amount of jus…and I’ve got to say the greens don’t look fresh, they look stringy and busted. But culinary plating wise…I guess white is fine.obviously the beetroot is not tidy and is also on the greens. Your jus looks great
