Maybe this is a silly question, idk. But, when you eat at a chain restaurant (like Texas Roadhouse) should you add calories to what it says on the menu for cooking oil/butter? Or can I just assume that the steak being served is about what the menu says it is?

Personal preference. I tend to trust the menu (at least in terms of what’s included, obviously things like sides and whatnot are additional) and as long as eating out isn’t happening daily, if I’m wrong, it’s okay.
You can trust the calories.
Corporate chains keep tight numbers on their food for money reasons. You can bet that your calories and the size of that steak are going to be pretty damn accurate.
