  1. Plating is pretty simple. Coulis looks really thin. Was it just strained and not further reduced or thickened? Without more concentration, I’m not sure it’s imparting much to the strength of heavy chocolate.

    The whip looks tasty, if not a little weepy. Garnishes are fine, but you may as well put them up top if that’s a clean, good raspberry, let it draw some attention.

    yeah not sure what’s going on with the raspberry but with the right sauce a simple pool would look better than the drizzle and for the whip you could do a quenelle to elevate the plating
