    Beautiful, and it looks and sounds absolutely delicious. My only possible recommendation is to maybe rethink the rosemary garnish, as I think it would detract from rather than add to the experience if it got on my spoon.

    This is really, really pretty. I would personally like a little more crunch than just the tuile (which is incredible, fyi), and I think the whole rosemary is an error. But otherwise, this is great.

  5. Beautiful dish, but the rosemary not so much. General rule of thumb for me is don’t garnish with something you wouldn’t eat. Would you eat whole rosemary leaves?

    Other than that, great concept and execution.

  9. Man,I can’t stop looking at it. Such great colors, details and flavors. Just the rosemary bits don’t do it for me but that’s a small detail. Fantastic work.

  14. Wow! How did you make that tuile shape? Did you cut plastic with an exacto in that shape and then stencil? Beautiful.
