    Your purée is too thick to bottle and swirl. You can tell by the shaky lines, you’re applying a lot of pressure to the bottle.

    It needs to be tighter and also there’s only one scallop and so many lemon segments that won’t make for a perfect bite think of everything on the plate having balance
