

This recipe makes 3 small crepes of 30g each.
I like to use a combination of inulin and oat fiber to replace part of my flour with. because inulin holds moisture well and oat fiber is drying and gives more structure. And both are lower calorie than the flour.
Ingrediƫnts:
Wet
- 20g (medium) egg whites (11kcal)
- 80g water
Dry
- 20g wheat flour (71 kcal)
- 10g vanilla protein powder (39 kcal)
- 5g inulin (8 kcal) (replacable with flour or another fiber)
- 5g oat fiber (0 or 8 kcal)(replacable with flour or another fiber)
-oil spray to cook with (9 kcal)
Steps:
1. Mix the dry ingredients and mix the wet ingredients seperate.

Add the wet ingredients little by little to avoid clumps.

Spray your nonstick pan with the oil spray just once. And then let your pan get warm on medium heat.

Once the pan is warm turn it down to low and put some of the batter into the pan. Evenly coat the bottom.

Wait for the crepe to become dry at the top and easily come off from your pan. If there are layers coming off when trying to get it out then it still need a bit more time.

Flip it and wait for the other side to be cooked and then it is ready.

Cook the other crepes the same way without adding more oil. If you bake more than 3 make sure to put in some oil after every 3.
