    Nice clean plate that you can tell a lot of work and craftsmanship went into. Not many people do brain anymore, kudos.

  3. Love it, I’ve never tried veal brain or ever cooked it but I love the idea. Great playing and great seasonal ingredients, I’d love to try this. And for the people saying there’s not enough on the plate, I imagine this is part of a tasting menu which is a perfect portion for that🤟🏻

  4. I would absolutely love to eat this dish. I never had salsify and jerusalem artichokes but sounds interesting. What are the white and brown sauces? The white one might be the artichoke, I guess.

    The plating is good but I’m not quite sure if I like how the colors of the plate interact with the colors of the dish.

  5. For me, everything looks far too spread out. Id probably nestle the veg up next to the brain and then shingle the brown sauce off the brain so its got a bite or two with the sauce on it and then the rest on the plate. And then do the same with the white sauce as the veg, just nestle it next to it.

    Would look much more composed and intentional
