  1. I’m not familiar with the original dish, but are the proportions of fish:sides similar in the original? It seems like too little romancesco for the amount of fish.

  2. The line of romanesco looks pretty, but the concassé dotted on the mousse looks a little contrived.

    Skate looks well cooked.

  3. The fish looks beautifully cooked and I would have liked to see more of it by plating the sauce underneath.
