I’m not familiar with the original dish, but are the proportions of fish:sides similar in the original? It seems like too little romancesco for the amount of fish.

The line of romanesco looks pretty, but the concassé dotted on the mousse looks a little contrived.
Skate looks well cooked.

The fish looks beautifully cooked and I would have liked to see more of it by plating the sauce underneath.
