Just curious to learn: does charring accentuate or contrast with the freshness of other ingredients?
I plan to recreate your beautiful salad but replace ham with cucumber or carrot shavings.

I’m not a chef, but if I ordered this based on what the description says, I’d be really confused.
What’s presented is a majority of “ham” (speck, prosciutto, ?) There are very few visible pieces of bell pepper. I don’t see any ricotta or fennel salad. Why not list the mint?
