His book “cheese and culture” is one of the best books explaining the origins of cheese. A true testament to agrarian anthropology and human nature. His book “American farmstead cheese” is the standard for explaining the chemistry behind cheese. Most of what you need to pass the CCP exam comes from that book. I’m not sure what the joke is about, I don’t watch a lot of Mr. Beast so I wouldn’t get it. But I can say that Paul Kindstedt is an absolute badass in the world of cheese professionals.
