Ive only had it once but it wasn’t like that.
Almost looks like the mites got to the interior.

I’m in the US and I buy mimolette almost any time I come across it. I’ve seen small amounts of that dust in the rind a few times, but I’ve never seen the rind extend more than 1/4″ or so into the body of the cheese.

BUT- I would cut the rind off and eat the rest, but that’s just me.

Like others have said, mites ate further in than usual but still very normal for mimolette. This is my own anecdotal observation, but I have noticed that the mites and I have similar tastes apparently and I often like wheels of mimolette that look more like this than tidier ones with less mite activity lol

Thought it looked like termite frass, mildly upset to learn that I wasn’t far off the mark. 🥲

If you let that sit out for a while you might get to see the mites saunter across your board. For reference, they are more of a white color compared to the dust they leave behind. 🙂

I saw the photo and thought “oh wow, that looks like it’s so old that part of it’s turned to dust! I wonder if I’m gonna read about the coveted mythical ancient cheese dust in the comments”

I cut this once a week, and have never seen mites go that far. Crazy. Love how this community is cool with just cutting it off and eating the rest. Thats Adventure!
