    It’s very pretty. Looks like your miso cream broke. The radish just on the plate…the great peppery flavor isn’t going to be worked into the “perfect” bite. I see the crispy tofu, but where is the confit potato? I think overall it needs to be tightened up.

  2. It looks really pretty from a distance but zoomed in a bit you realize it’s mostly some broken sauce and some watercress with a whole radish in the middle. I think when you do platings this way you need to bulk the amount of things on the plate. Either more ingredients or more of the smaller things already on the there. You can do it without even making the dish much larger. It’ll add to the dish both in presentation and also flavor.

    Just trying to be constructive, definitely not trying to offend you.
