

Razor Clam Tartare with fennel, green apple and Jerusalem artichoke
So many levels of flavor that came together really well. The fennel gel is very strong but went well together with the apple and lime juice in the tartare. The shell from the razor clam makes a perfect vessel to hold the tartare and looks really cool too!

how do you eat this? a tiny spoon? itβs beautiful, but seems awkward.
I love the dark to light pallet going to the top! it looks light, clean, and sounds like it tastes lovely.
