Here is your daily cheese facts: Blue Rathgore is an Irish cheese made from goat’s milk, characterized by its creamy, crumbly, and moist texture, a buttery, spicy flavor, and a blue-green mold on its body. The cheese is traditionally ripened for at least 6 months. It is used for various dips, sauces, and dressings. Sadly, it’s no longer in production, and it was produced from 1989 until 2000 by the Woodside Dairy.
