Ok, I’ve been staring at this pic for 5 minutes and I can’t correlate bananas foster and what is in the photo. I know this is the point, and it’s amazingly well presented, can I pleeeze see the inside?

Something about the contrast of the bright blue and the brown is really off-putting to me, the blue is so synthetic and has nothing to do with bananas foster. I think more of a blueberry-purple-blue (or bright yellow like a banana) would compliment the brown.
What is its purpose on the plate?

Was the phyllo difficult to work with? I’ve done something like this but I used tuile for the nest.

To my eye the blue is jarring. it pulls my eye away from the actual focal point of the egg. Maybe use a chocoltae twig and some chocolate feathers or leaves lightly dusted in gold luster powder for contrast.
