Can I ask how long does it take to construct a dish like that, I dont mean the actual cooking but just plating it. And does it put you under lots of time pressure to get the dish out while still having it look like work of art?

How did you get the ricotta to lose almost no height when you placed the morel on top? The contours are still like perfect!!!
