Coopers Hill isn’t a sharp cheddar. It’s a creamy soft cheddar that has onions and chives and it’s amazing! Best for baked potatoes, burgers and others. So so good.

I have tried the Brie yet but I will let you know when I do. It’s suppose to be similar to Jasper Hill’s Harbison cheese.

  1. i saw the second pic and almost begged you to go back for the rush creek reserve. glad to see you snagged it. enjoy her with crusty baguettes, some salami (i prefer sweeter ones for that one), and a cornichon. you’ll be in heaven indeed.

  2. Rush creek reserve is 100x better than harbison and not a Brie 😅 it’s a washed rind, raw cheese. meatier rather than the umami taste of Brie! Bake a lil and dip potatoes and cornichons in it!

    So glad you guys went with rush creek, and I hope you enjoy! You’ll have to let us know how you liked it, plus we got more bark wrapped cheeses. (They’re bloomy washed rind soft cheese not bries. Doesn’t make it any less delicious)
