As with most things in plastic, the leaching of chemicals in the plastic itself determines the expiration date. In a side note, if it hasn’t gone south, I’d still eat it

I think the general consensus is as long as there’s no unusual mold and it doesn’t smell like ammonia, you’re safe. What constitutes “unusual” mold seems to vary by cheese, tho.
