I recently got this 2 year aged Cirone. I had a bit and loved the rich flavor, but I noticed these brown spots on one side.

What are those brown spots? Is it safe to eat or should I toss it? :/

    To me this looks like a few pieces of rind just stuck to the surface of the cheese when it was cut. This happens when the cheesemonger is cutting cheese and small bits of rind come off of the cheese and land on the food prep area. If the monger is not particularly assiduous they may lay the cut piece down on some of those crumbs. They stick to the cheese and if the monger doesn’t give it a good scrape before they wrap it, then it discolors the cheese. It is not sightly but it’s not really a safety issue.
