Looks delicious. I’d get rid of both greens in its current form. Garnish should highlight or compliment, the current greens distract. Either chop and garnish or have it on the side.

Looks great, but I’m not sure I’d want to eat raw Brussels sprouts leaves, so maybe replace the green element with another garnish.

The bone is visible end to end somehow… that is bad cookery but regardless you probably want to hide that. The raw Brussel leaves seem pretty superfluous, you might dress them lightly (and the fennel) so they dont look so dry.

I like the green on this dish, and the plating looks clean. I’d say more jus, focus on the Brussels as an element not just a garnish, fry of cook in 1/2s and dressed, incorporate the fennel fronds for garnish?
