Sorry but the first picture doesn’t look appetizing, once you take a spoonful and see inside it’s a bit better. I would separate out the components a bit more or have everything not so well coated, so you can see through the outer layer from the start.

Try a black plate or add some colour / contrast. Sounds delicious.

Would be more visually interesting/appealing with a red powder or maraschino cherry splat to suggest ice cream vs slime mold

I like it. Monochrome is modern and trendy and hiding the ice cream under the granita and puffed rice gives a little bit of theatre when the guest goes for the first bite. Kind of like a nice surprise!
