The purée looks excessive. I would cut it back to maybe just the protein. But I’m not nearly as talented, nor as skilled in plating as most on this sub, so give my opinion the weight it deserves.

Puree looks like a big pile of mayo rethinking that is crucial. There’s just too much on this plate and your protein ends up lost. The toast probably needs to be separate, the idea of the toast sitting on top of the puree seems incredibly unappetizing to eat imo.

Your purée looks like you just nearly dropped the plate before you took the photo. I’m not sure what Brie toast with apples has to do with chicken breast.

the puree needs to be smoother and a bit looser so it doesnt look like a pile of paste. also, wipe your plates. clean lines.

the toast is unnecessary, and definitely shouldnt be sitting on the puree.

I love that you took the time to post two photos. Great job on that, you’re ahead of better looking plates just by showing us the side & top view.

Maybe thin carrots for color with the apples.

The actual cooking and preparation of most of the elements actually looks good. The chicken fat is well rendered and the chicken is nicely sliced. The onion looks pretty good, the apple alumettes are quite neat. Even the purée looks smooth.
Unfortunately that actually adds to the travesty of this dish, because you’ve taken some good things, bursting with potential, and made a right mess.

might as well have done the bread>spreads>chicken>apples and done the sauce either around or on top before the apples, with the onion taken apart by layer and dancing around the toast. make it cohesive namean?
