
If you have a Kitchen Aid, this vegetable sheet cutter attachment is a game changer! It makes wide strips of vegetables that can be used in place of pasta, tortillas, etc. This is a sweet potato I cut and used instead of tortillas for enchiladas!

We do this with zucchinis. It works so well and is super tasty! Now I want to try with a sweet potato.
