Second of all if you’re making those you probably really are excited about salads. Good for you because that’s hard sometimes.
But if you’re having trouble staying excited about salads, maybe try other stuff. What is your salad accomplishing in your meal plan?
Is it a place to get leafy greens and protein? Maybe try something with a totally different feel like spinach stuffed chicken breast.
Is it fiber and protein? Lettuce has some fiber but it’s not that much. Maybe try roasted root vegetables as a bowl and put your chicken and tomatoes in there.
Is it the bulk? You can have a lot of broccoli or cauliflower for similar calories and add volume to your meal a different way.
Is it the delicious dressing? Try putting the dressing on a side salad and make it with an entree you like better.
Is it because you feel like you’re supposed to eat salad when you’re on a diet? Eating foods you don’t love is a mentality that makes it hard to stay on your diet.
That said, I would totally look forward to that salad. It looks good. I always forget about hard boiled eggs when I cook at home so to me that looks like a fancy restaurant salad even without the flower.

I too had a salad for lunch today. (Baby spinach, and leftover shish tawook with a raspberry vinaigrette). The only think I was desperately wishing i had was some tomatoes. Your hard boiled eggs look good too.

My new favorite is roasted butternut squash, mixed greens, cucumber, red onions, dried cranberries, pepitas or walnuts, feta cheese, and balsamic dressing. I use Marzetti brand salad dressing, 50 calories for 2 tbsps.
I’ve been turning everything into a salad lately. If I’m craving a burger; burger salad. Cheese steak sandwich; cheese steak salad lol. Pizza; pizza salad. I used mixed greens, sundried tomatoes, fresh tomatoes, pepperoni, shredded mozzarella, banana peppers, olives, and a few croutons. I used the brine from the banana peppers as the dressing along with a few red pepper flakes and oregano.
I’m hoping I don’t burn out on salad yet. It’s high volume and satiating.

If you’re looking for warm foods, maybe find a lower calorie pasta to eat the same toppings on top of? I’ve been doing things like that, last night I made ramen without the packet, mixed with green beans and egg and some soy sauce, with my own seasonings, it ended up being about 340 (though that number assumes half the seasoning packet was used)
