Lose the greens in favor of chive oil or something. Don’t cover the pork!
I’d rethink playing of the mole. It resembles runny dog poo. Less of it, or maybe a brush of it, idk.

Flavour-wise, I would really like to try this. But the messy greens on top and the amount and the texture of the mole make it look unappealing. It’s difficult to make out in the picture, but did you brine the pork? It looks lightly cured, which happens easily with sous vide.
I would use less mole and maybe puree it more finely or pass it through a sieve. And then I’d use different microgreens or only the tops or put it under the pork with the agrodolce on top, so that it looks cleaner.
