Nice plate.
Reading green tea makes me want to see green dots. But I know tea is brown.
Matcha is a nice green for dots but way too bitter. Maybe add some green parsley extract to the finished gastrique?
Why not use the word caviar, I see it but just the name of a Russian city into the description is odd:
Beef / Regina / oolong Hollandaise / Sour Fermented Turnip.
I changed my beverage to Chinese tea from Pepsi here, but unless you’re Canadian the city alone with the four elements is confusing.
