i respect the precision of those strawberries, i probably wouldn’t be able to do that. and it sounds absolutely delicious. that said, the shape just brings to mind some sort of tendrily sea creature for me. i scrolled past this picture too fast and thought it was some type of urchin. i think the strawberries could be arranged in a way that’s not so visually aggressive with sharp points facing every which way
Hairy strawberry ninja star. Maybe try a rosette star or a tighter spiral. And more intent with your zest, sprinkled over detracts from the dish. Thin spirals of candied lime zest imo.
Sounds delish though, love me an apple tart varient and the lime is a nice twist
